SUMMER TASTES LIKE RASPBERRIES

Raspberries are in season at the same time as roses are in bloom. It is worth savoring this time from the first to the last raspberry

The princess of berries

A ripe raspberry has an inimitable taste. If you hold a perfect bowl of raspberries in your hands, you should not hesitate to enjoy them immediately.

This capricious berry does not like any further transport or longer storage and rapidly loses its flavor. Compared to many more robust berries, the raspberry is not very forgiving.

You can see the taste from the outside, so it’s worth grabbing them when raspberries in deep red color and good shape are offered at the market or at the greengrocer.

From morning to evening

Fresh raspberries lend an optimistic look to any plain muesli in the morning. However, if your breakfast is more Italian and consists of an espresso and croissants, raspberries can be used to conjure up a quick dessert in the evening:

Take the prettiest bowls, fill with Greek-style yogurt, top with the contents of one or two passion fruits and add raspberries. Ready in a few minutes and delicious on a warm summer evening.

Individual raspberries can be used to decorate the drink, but are not necessary.

It looks different when the raspberry can show off its full color and taste qualities, such as in a daiquiri:

First you need a syrup: 2 tablespoons of sugar and 150 ml of water and, if you like ginger, half a tablespoon of finely grated ginger in a pan, simmer gently for about 10 minutes and then leave the syrup to cool. This makes about 2 tablespoons of syrup.

To make the cocktail, puree 100 grams of raspberries, a little crushed ice, 4 cl white rum and 1 tablespoon of lime juice and pour immediately into an iced cocktail glass. Cheers.

The red daiquiri is undoubtedly at its best in a delicate glass from Lobmeyr in Vienna, which is celebrating its 200th anniversary this year.

For the rest of the year

Frozen raspberries are great for various cake recipes.

Raspberries and almond paste form a wonderful liaison and can be used to bake delicious raspberry bars in just a few minutes. Provided you use ready-made strudel dough.

Cut the strudel dough into lengthwise rectangles, brush with melted butter and spread the almond mixture on top before adding the raspberries.

Fold the rectangles into small sticks and place them, seal side down, on a baking tray lined with baking paper and brush with the remaining melted butter.

After baking, dust lightly with powdered sugar and serve lukewarm.

We love oats

Oatmeal almost always features in current English cake recipes. As we love oatmeal, raspberries and all things English, we mix both into this summery cake that requires very little work:

Gently melt 180 grams of butter. In the meantime, mix 200 grams of fine rolled oats with 200 grams of flour, 150 grams of fine brown sugar and the juice of half a natural lemon. Then stir well with the melted butter.

Pour two thirds of the cake batter into a springform pan lined with baking paper and bake at 170°C for about 15 minutes until golden brown.

Spread 250 grams of raspberries on top. Either leave whole or press down lightly with a fork if you like the filling juicier. Add the rest of the cake mixture (you can also add sliced almonds, pine nuts or other nuts for flavor) on top of the raspberries and bake for another 20 minutes.

Packed full of good things

The individual fruit of the raspberry is made up of lots of small drupes that are tightly packed together to form the berry.

Raspberries are a good source of vitamin C, iron and antioxidants. As raspberries are said to have anti-inflammatory properties, no monastery garden was complete without them in the past.

Once the raspberry season is over at the end of summer, what remains is a delicious raspberry spirit. As the raspberry is rather subtle in taste, the supposed raspberry aroma and flavor in raspberry brandy comes from the laboratory in the majority of raspberry brandies.

Aficinados therefore fill their glasses with Hintperi – a raspberry spirit from the highly acclaimed distiller Spiritus Rex from Malente. Kilos of wild raspberries from Romania go into its raspberry spirit. A delicious consolation until the raspberry harvest begins again next summer.
